Location of Historical Zapotec Civilization
Zapotec is the language of Zapotec people, who are indegenous people of Mexico. Most of its popluation is in the Southern state, Oaxaca. According to the census result of Mexico in 2010, around 425k people, can speak Zapotec. The language is also spoken by people in many neighboring states of Oaxaca, even in immigrant communities in the US, though Zapotec is often in a bilingual status with Spanish among most of its speakers.
IU currently doesn't offer Zapotec courses but CeLT has some recording archive that could be potentially conditionally shared.
